Oatmeal Muffins

Ingredients
1 cup all-purpose flour
1 ¼ tsps baking powder
¾ tsp ground cinnamon (I use 1 1/3 tsp)
½ tsp baking soda
½ tsp salt
1 ½ cups quick-cooking oats or rolled oats
1 cup whole milk
1/3 cup vegetable oil
½ cup packed light brown sugar
2 eggs lightly beaten

Instructions
1. In a large bowl, add milk to oats and let stand at least 10 minutes.
2. Preheat oven to 425 F. Line a 12-cup muffin pan with paper liners or spray with cooking spray.
3. In a medium bowl, whisk together flour, baking powder, cinnamon, baking soda, and salt.
4. After oats have been standing for 10 minutes, add brown sugar, oil, eggs to oats and milk mixture. Stir to combine. Add flour mixture and stir until just combined. Divide mixture among cups in muffin pan. (You can sprinkle the tops with extra oats or coarse sugar if desired.)
5. Bake for 7 minutes then, without opening oven, reduce heat to 350 F and continue baking for 12-15 minutes.
6. Allow muffins to cool for a few minutes. Transfer to a wire rack and let cool completely or serve warm.
